Crafted on a small island off of the coast of Portugal, Madeira wine is known for its velvety mouthfeel and notes of walnut and orange peel. We knew these flavors would marry beautifully with the vanilla, caramel, and spice notes in our organic Pennsylvania bourbon. Luckily, we were able to source two Madeira barrels from Portugal and, after some searching, found the perfect flavor profile of aged bourbon in our barrelhouse to let rest in the barrels for a year. The result: one of our most luxurious whiskies yet with notes of toffee, sweet custard, and brown spice.
- We made Pennsylvania Bourbon and aged it for 18 months in small cask barrels (15 and 25 gal.).
- We filled the Madeira barrels with bourbon in March of 2018 and rested the whiskey in them for about 1 year before bottling.
