Dunder. An old school approach to rum making. Dunder Rum is made using a centuries-old production technique pioneered by rum distilleries in the Caribbean by incorporating the spent wash “Dunder” of a previous distillation into the next fermentation. Prior to incorporating, the Dunder is allowed to develop a complex flora of bacteria over the course of several months that contribute fruity and savory aromas to the rum.
