We are releasing our Dunder Rum! This product is very special and unique, and we cannot wait to share it with you.
Dunder is the liquid left after distilling a batch of rum, similar to stillage in whiskey making. Some rum makers, especially those making traditional Jamaican rum, add dunder into the fermentation in a similar way that sour mash is used in whiskey making.
We made our starter culture of dunder by blending molasses with cheese enzymes and allowing that mixture to ferment through bacterial fermentation (similar to compost!). This created a variety of funky, organic acids. After months of fermentation, we added our dunder to a blackstrap and baking molasses ferment. The dunder supercharges the ester production process and creates a flavorful and fruity style rum! Aged for one year in oak barrels, the resulting product is a blend of different barrels with notes of banana, brown spice, and molasses.
We are releasing the product at 5pm on Friday, June 29! One of our excellent distillers will be on-site so you can taste our Dunder Rum, purchase your bottle, and learn more about this unique product. We will also have TWO special cocktails made with Dunder Rum!
Cousins Maine Lobster will be with us for delicious lobster rolls and other lobster dishes, along with live music from The Goodfoots from 7-9pm!
This release event is FREE! No need to RSVP. We do encourage you to purchase a $20 passport at the door that includes a tasting of the Dunder Rum, TWO cocktails (we recommend trying both Dunder Rum cocktails), and one pour of Farmhouse Cider from Threadbare Cider and Mead!
